Chocolate Mayonnaise Cake

INGREDIENTS
3 extra-large eggs
375 ml (300 g)sugar 
5 ml vanilla essence 
500 ml (280 g)Snowflake Cake Wheat Flour 
15 ml Snowflake Baking Powder 
5 ml bicarbonate of soda 
125 ml(50g) cocoa powder 
250 ml mayonnaise
250 ml water

Icing
125 g butter or margarine, softened
375 ml(200g) icing sugar, sifted
80 ml(40g) cocoa powder, sifted 
30 ml hot water
5 ml vanilla essence 
15 ml milk (optional)

METHOD
1. Beat eggs and sugar together until light and creamy. Add essence. 
2. Sift flour, baking powder, bicarbonate of soda and cocoa powder together.
3. Combine mayonnaise and water. Add to creamed mixture, alternately with dry ingredients. 
Mix well and spoon mixture into two greased 20 cm round cake pans.
4. Bake in a preheated oven at 180°C for about 40 minutes. Leave in pans for a few minutes before turning out 
onto a wire rack to cool completely.
5. Icing: Cream butter and icing sugar together. Mix cocoa powder with hot water until smooth and add to icing. 
Add essence and milk and mix to a smooth, spreadable consistency. Sandwich cake layers with half of the icing. Use remaining icing to ice top of cake.
